Love garlic? This recipe is packed with flavor from the melody of lemon, garlic, spinach, and onions. The key to making the chicken delicious and juicy is to cook it with a lid on. This allows all those flavors to steam with the meat and help keep it tender.
One last note before you dive in – I am a big garlic fan so I used 3 cloves in the recipe. If you prefer a softer punch of garlic, try only using 2 cloves.
Lemon Garlic Chicken
2 chicken breasts
¼ sweet onion, chopped
2-3 garlic cloves, minced
1 lemon, sliced
1/2 bag of spinach (approximately 3-4 cups)
2 T olive oil
Directions: Add olive oil to a large pan and bring to medium/low heat. Add onions and garlic – cook for 1-2 minutes. Season chicken breasts with garlic salt and pepper and add to the pan. Cover with a large lid and cook for 10 minutes, turning meat over half-way. Add sliced lemons and spinach – cook for 2-3 more minutes. Slice chicken to make sure it’s done (juices should run clear), remove from heat, serve, and enjoy!
