Craving something savory AND sweet for breakfast? This omelet meets the bill with savory Rosemary seasoning and with sweet cherry tomatoes. I grow Tumbling Tom Cherry Tomatoes at home in my garden so I used those in this recipe, but grape tomatoes (which can be easier to find in a grocery store) work too.
Rosemary Tomato Omelet
1 egg (cage free or organic if possible)
2 egg whites
1 pinch of Rosemary seasoning
10-15 Tumbling Tom Cherry Tomatoes (or grape tomatoes)
Directions: Cut tomatoes in half and set aside. Spray a small non-stick pan with PAM olive oil spray and bring to medium heat. Add 2 eggs whites and 1 egg. Break the yolk in the pan with a spatula. Season with salt, pepper, and Rosemary. Add half of the cherry tomatoes onto the omelet and fold omelet over, making a half-circle. Throw remaining tomatoes into the pan (other side) and cook everything a remaining 1-2 minutes or until done. Serve with 3 slices of bacon and enjoy!
