This is my favorite lunch salad right now. You’ll notice that I cheat a little with the ranch dressing (definitely not Paleo). However, since I’m still a beginner I add a few little cheat items here and there to help myself stay the overall course.
If you’re bad-ass and eat full Paleo, just substitute the ranch dressing for an olive oil/ red wine vinegar mix. Then, add salt and pepper to taste.
Turkey Avocado Salad
5 oz deli turkey
1 medium tomato
3 cups green leaf (or red leaf) lettuce
2 T Kraft Light Ranch dressing
Directions: Cut the cucumber and avocado into thin slices. Dice the tomato into bite size squares and measure out 5 oz of deli turkey. Throw all ingredients on top of 3 cups of lettuce. Add your dressing on top and enjoy.
